Cacio-e-Pepe

PastaHere is a recipe that uses four (4) simple ingredient and it is absolutely delicious, pasta Cacio-e-Pepe! The four simple ingredients are pasta, cheese, cracked black pepper and butter. For the pasta you can use thick spaghetti, bucatini, linguine or fettuccine. I prefer the bucatini but it is not always available at the local grocery store. For the cheese use Pecorino but if not available use Parmesan. You can grate it or buy already grated. Will need good pepper and if possible European butter.

Super simple to make. Make the pasta according to the instructions in the package. Once the pasta is done, chilled under cold water or ice to stop the cooking process but reserve about one (1) of the water used to boil the pasta. Drain the pasta and drizzle some olive oil over it and mix it well. Set aside until ready to finish the dish.

When you are ready to finish the dish, add the reserved water and butter into a hot pan or pot. Add the cooked pasta. Add plenty of cheese and lots of cracked pepper. Ensure that the cheese has totally melted and it has turned into a silky sauce. Mix it all well and serve it immediately with Montepulciano, Aglianico or any light to medium red wine. Enjoy!
